review rating 5  My wife & I are from out-of-state, and we’re staying at a local hotel, in advance of the Packer game. We saw that the Republic was rated 4.7 by 300+ people and walked there for a drink and appetizers. First let me say that everyone we met lived up to Wisconsin’s friendly reputation. The bar was full, so the host seated us at a dining table. Laurie was our waitress, and despite learning we weren’t ordering dinner provided excellent service. The vegetables were prepared and presented in excellent fashion and the MAC & Cheese when mixed with their cheese butter was fantastic. Thank you. What a great start to our weekend.

review rating 5  Great food. Excellent service. I am a frequent business traveler so dining alone is sometimes challenging. The service isn't usually that great, but that was not the case while eating at the Republic Chophouse. My server was attentive, but not overly intrusive. My drink was always filled and he was easily accessible if I needed something.

review rating 5  The room was dark and sparse but seemed to work for them. The sea bass was perfectly pan fried with a tender center and slightly crispy outside with varying degrees of rich buttery, salty edges kissed by the pan. The caprese salad was amazingly fresh with ripe but firm tomatoes and balanced reduced balsamic , oil and subtle surprise dried or fried herbs. I tried the lamb my friend ordered, it was a little over cooked and bordering on chewy. Lamb was good but just not as deliciously perfect as the fish. You can easily hit $100+ per seat so be prepared. Recommended for a high end date night or business outing.
